The few times I've taken photos of trains outside I usually put them on a folding table. I've seen photos of trains on the edge of a deck railing and have seen small tables with track and scenery made just for the purpose. There's a guy named Mansfield that has posted many photos he took outdoors, but they're in other magazines.

wow, a dearth of serious responses, matt.
I built this several years ago when I was weathering cars to sell on Ebay. It started as a 3R display, but I eventually tore the track up and replace it with 2R, and weathered the track. Now it just sits in the corner un-used.
Really rather boring, but it did the job when I needed a display in natural light, but it's pretty darn heavy to lug around!

Matt if you wanna see some really professional stuff look up Ken Patterson on Youtube. All his stuff is HO, and he does stuff for magazines and manufacturer displays/ads.
Here...check this out if you haven't seen it. It's just a small sample of what he does.
I saw one of his videos on the MRH site. He actually did a shot with some moving equipment. Looks like he has perfected composition and the art of using a borrowed view.
By the way, great job on your shooting platform.
