I like to use a feather duster to get general dust and cobwebs off things on the layout. For the heavy type of "shop dust" you might be talking about, a soft-bristled paintbrush might be a good option. Using the paintbrush can be tedious but hey, it gives you a chance to enjoy the details on your models up close, right?
