I always say "appreciate it" or "thank you" when conducting my business just because it is the right thing to do. Of course, the seller should always be professional and say thank you. If not, I'll go elsewhere.
I do not thank a forum sponsor for supporting the forum as I just spent my money there. I also do not go out of my way to support a forum sponsor and quite frankly, I really could care less if they are/aren't. While I get the point, I really don't care for the "protection" being a sponsor gets you here. You can't post a bad experience, say anything remotely critical, etc without it getting deleted VERY quickly.
