How To Replace Big Boy Scale Coupler with Fixed Coupler for Double Heading

The subject pretty much says it all. I would like to know how to replace the swing out coupler on my Legacy Big Boy with the fixed coupler for double heading. The screw that secures the coupler is obstructed by a lower cow catcher cross member. Any help would be appreciated. Thanks!
