layout minimum size

I took a 40 inch by 60 inch plywood, glued and screwed some 1x2 and 1x3 for support underneath and glued foam board on top and painted it and added grass for a HO layout that has 2 straight on each side and a spur in the middle. The idea is for my son to slide it under his bed when not in use. I want to build an O scale for my other son. What is the minimum for O scale using 31 inch MTH track? I don't want to buy more track to get 27 inch radius.
