Legacy in conventional mode

How many Legacy components can you control in transformer mode? I looked at an instruction download and doesn't look like much, especially compared to DCS. All it says is touch the whistle for random crew talk. What about the couplers? Also, is all Legacy crew talk this radio dispatch stuff? When a steam engine is idling do you hear any crew talk like DCS? Is it all radio too?
