I'd keep the universal remote as you can use it to control both engines independently, as opposed to using the two separate remotes. If money is an issue, I'd return or sell it. You can indeed operate more than one locomotive at a time on a single track, with LionChief or LC+, as they are command locos, just FYI, if that's not clear.
