Another vote for the Illinois Central City of New Orleans or the Panama Limited, either one is fine with me. Sunset 3rd Rail has listed the Illinois Central as one option for the E6 but no cars. I would be happy with a "generic" streamline set from GGD to go with the engines as I don't really think we will see a true scale version.
