How can I change the default starting direction of a conventional loco (i.e. Williams)?

reverse the motor field coil by swapping the wires the opposite they way they are hooked up that will reverse the motor . anytime you reverse the field coil wires in relate to the armature brush wires you will be reversing the motor. ok
that's what the E unit does on the old prewar Lionel engines

Most Williams engines have can motors. Either reverse the blue and yellow wires on each motor, or take the blue and yellow wires out of the plugs that go to the reverse unit board and swap them. Swap the blue into the pin where the yellow went and swap the yellow into where the blue went.
If you have directional headlights, you'll want to swap those as well.
