I've been working on this layout for a little over a year and it is by no means finished. I do know that I need to light my buildings and finish putting grass down, but I kinda hit a wall on what to do next. I scratch build my buildings, and I'd like to know any suggestions for any more buildings, trackside structures, or scenery? Maybe even backdrops or anything like that? I'm not into photorealism, nor do I have the skills to do so. I'm all ears!

I always like to see a bridge on a layout and am currently thinking of ways to work one into my evolving / future / someday / maybe shelf layout.  For some reason both a bridge and a tunnel seem obligatory on a layout and must go back to my youthful ideas of what is integral to a model railroad's DNA.  

Also perhaps adding a sanding tower to your engine facility?  Always a good candidate for a scratch build and doesn't require a huge footprint if space is at a premium.

Just a few thoughts ...

When you walk into your train area and walk up to the layout, what are the usual areas or details you seem to look at first, and repeatedly?

Those are the areas you need to do more of, to continue with your artistic expression in the types of work that interest you most. Landscaping, trees, low-foliage? Particular types of buildings? Certain neighborhoods? Do more of what you have demonstrated to yourself that you like getting your mind and hands into.

That' s my initial suggestion.
