I want to add a diesel to my train collection but I saw some diesel videos with sound and plenty of smoke. What are the best or recommended models and manufacturers?

Welcome to the ogr forum.
You will find various opinions but both MTH and Lionel make diesels engines that smoke. MTH engines typically put out a larger volume of smoke but your results may vary.
I would be helpful if you mentioned any specifics interests such as a given time period or road name.
Well, if you want a SMOKING diesel, look for the MTH Centipede, it has two smoke units. I have an A-A Centipede, four MTH smoke units cranking out the smoke, after a couple of trips around the layout it's hard to see anything in the room!
