Does anyone have a recipe for the Red & white colors used on later SAL Passenger equipment? I have heard that the white is actually a very light green.

The white is actually Seafoam Green. It is available through Tru-Color. I don't recall the red off the top of my head, I'll have to look it up. It was a pretty standard color though as I recall.
SAL Mint Green - TCP-337.
SAL Chinese Red - TCP-012
I know SAL used Chinese Red on their switchers, so should work on the red stripes as well.

The Mint Green is actually close to white and used as their last passenger locomotive scheme. It is described as white with a few drops of green mixed in! I don't know about the SAL passenger cars being in this scheme, always shown in Pullman Green. There was a light shade of green (think the Jolly Green GP40s) that was used on freight locomotives in the late 60s, but I don't think it was applied to passenger cars.
I have attached an image of the locomotive scheme found on the net.
The original Orange Blossom Special ended in 1954, and i don't think the SAL painted their heavyweight cars in this scheme. Usually a railroad painted them silver to match lightweight cars (to mask their age) or to match other cars (like the ACL purple / silver).
These look more like Texas Special colors to me. IHC, like many HO model manufacturers, take liberties with their paint schemes if they think it will make them sell.
My railroads books are packed away since we are moving during the next two weeks, but I will see if I can dig out my SAL passenger books. They would mention this scheme if it was truly used by the Seaboard.
The maroon/gray SAL scheme is indeed prototypical. The OBS was painted in this scheme the last couple of years that it ran. The Dubin Pullman paint book states that the maroon is the same as Milwaukee red and the gray is lighter than B & O gray.Hope this helps.The roof was maroon also.

The mint green faded quickly into white, from all the books I have. Never saw any passenger cars in mint green, but they had a few baggage cars and a couple of coaches in gray:
