I have seen them in The Choo Choo Barn at Strasburg. A small spring keeps a switch aligned in one direction but it allows opposing traffic to push the points the other way. It shouldn't be hard to install a spring on a manual switch.

 

I could be wrong but I vaguely recall that Lionel manual FasTrack switches work that way.

 

Up the road from The Choo Choo Barn, the Strasburg Rail Road uses spring switches by the station, on the passing siding at Groff's Grove, and on the runaround track at Paradise (a.k.a. Lehman Place Junction). They make a distinctive "clunk" as they return to their original positions after each wheelset passes over them.
