As far as toy subway trains. In the 70's there was a company called U.S.T.T.C that made some BART and DC METRO trains but they are very toy like with Marx drives and prewar Am Flyer repo. wheel sets. The shells are nicely extruded Aluminum though. They sit really low and can interfere with switch machines. They were usually sold as a set of three but there are production changes in the run.

Responding to your question as I understand it, there may be one limited option for you.  That would involve changing existing MTH sets to produce a version not yet sold.  Let's say you wanted an R21 in as-delivered kale green, which MTH has not as yet offered.  Conversion could be achieved by edging the windows and numberboards with dark green decals and then painting the car in a color close to the original TA kale green.  There's a Great Northern Railroad paint that's pretty close.  There are other possible variations you may be interested in but you get the idea.  With time and patience you will surprise yourself with how good you can actually get.  Good luck!
