It can certainly be done.  I have one in an MTH snowplow, and I have a couple that I want to install yet, one in a caboose and the other in an engine.  I need a diesel like an F3 with dual headlights, then I'll use one of them for the camera and the other for the headlight.

 

Here's a couple of cameras I've used, I have a couple of the top ones waiting for a home, and one of the bottom ones as well.

I installed a cube one like the GRJ's second one in the cab of a non-powered MTH SD45. It looks out from the engineer's position. I connected it to run on track power with an adapter available from microcam. Plenty of room in a dummy unit. I doubt it will fit in a powered unit with the can motor there.

I just have Ivor push a wagon containing an old Flip video camera. Fits snugly into one of Lionel's 'troublesome trucks' facing ahead. Or I can tow it from a look behind the train or adjust it to a sideline view. I've also used an old iPhone in the past. No wi-fi. Nothing live. Video exportable or uploadable after a run (then I can edit it a bit too)
