Just so you know, the aforementioned Texas Transportation Museum is open only Friday - Sunday, but the San Antonio Model Railroad Association has a "museum" open on Monday, Wednesday and Thursday as well as Saturday - Sunday.  Both have limited hours when open.   

The only hobby stores are Dibble's and HobbyTown, neither of which will impress much.

Offered this insight in reply to a prior inquiry.  Also may suggest checking out the Fort Sam Houston Museum or the San Antonio Fire Museum if frustrated by the dearth of train related opportunities, and you could always ride the Zoo Train 

Not sure how mobile you will be, but all of the above are geographically dispersed.

If you could figure out a way to turn back the clock about 60 years Dibbles was one of the two store in SA to shop Lionel.  Joske's being the other.
