Your best bet is to convert the older style MTH trucks which the coupler arms come off after removing one mounting screw for the coupler arm. I would personally not remove couplers from the newer style trucks....
Yes they can be disassembled. Remove every screw you see. When done every part will be removed. You just reassemble it without the 3 rail coupler. You shouldn't have to bend or break anything. I believe Erics Trains has a good video on You Tube that shows how to do this. The hard part is keeping track of the springs in the truck frames. 3 on each side. A pointed pair of tweezers is a must or a very small flat bladed screwdriver. These things tend to fly. A good way to do it. Place the truck inside a clear plastic bag that still gives you enough room to work and see what your doing. This way when a spring flys. They always do. You have a good chance of finding it in the bag. This is a tedious project. You need patience to deal with the springs and to hold everything in place when putting it back together.
Dremel tool with a thick fiberglass cut off wheel. I took a few apart and took forever to put them back together. Time is money.... cut all that crap off and be done with it.
