This example is your 20 gauge in black, but they have red, various gauges, et al, and larger spools.

They and other hobby distributors sell the Miniatronics line, which includes spools of wire, various colors, various gauges such as #18...

Of course, your local electrical retailer/wholesaler has wire.  Automotive shops, too, although it's often more costly due to harsher environments (fuels, etc.).  Big Box stores like Home Depot, Lowes, et al, have wire by the foot, or on smaller quantity spools.

FWIW...

For light loads and switches I buy 50 foot rolls telephone wire. ($12.99) I strip the outside plastic wrap off. I end up with 4 colors (red, green, black, yellow). I cut to length I need and amount of wires and clamp one end in a vice. I then put other end into a drill chuck and twist. Normally I include one extra wire for future use. I tin the wires before climbing under the table if needed.

For larger gauge wires I buy the 100 foot rolls at Lowes. they stock a few colors and you can order more colors if needed.

I have learned if I am working late at night and stores are closed DO NOT use the wrong color wire.  It may take years but at some point it will bite you.

On ebay, and other places, you can get "super flex" wire. It is a good choice where the wire will be constantly moved around such as when the truck turns on the track. It has many very fine wires stranded together. You can bend it pretty serverly and not kink it or break it.

Regular stranded wire is too stiff for trucks to turn freely. JMHO
