My new layout features Lionchief locos powered by a 180watt Powerhouse, providing a constant voltage of 18v I believe. Which switch should I use? Lionel offers 3- remote, remote/command and command control.

Assuming you are using Fastrack, the switches are plug and play. They are powered by default from the 18v track power. I find operating with these switches to be reliable.
The command switches have a receiver for the TMCC signal transmitted in the track. If you have a Cab1, Cab1L, or Cab2 control system, the Fastrack command switches can be operated with your handheld Cab remote. No additional wiring needed. I note that only old stock switches do not have the command feature so best to avoid these.
If your layout track is other than Fastrack, then you have to mate the Fastrack switches to your track system with adapter pieces (you can buy or make these).
There are several forum threads discussing the mismatch of Lionel's documentation and the terminals used for Aux power instead of track power. Recommended reading if you are providing Aux power to the switches, but you won't need to do that for your Lionchief 18v track.
Thank you. I am using fastrack. Also using the the individual remote provided with each Lionchief loco. So, should I use the "Remote" designated switch of the 3 listed? They would be activated by the remote switch provided with each turnout?
Correct. The remote-only switches may be discounted so you can save a bit, I run TMCC command control so the remote/command switches are plug and play for me. If the switches are about the same price, get the command switches. Other than an additional circuit board inside, they are identical.
I started my layout this summer and I have been buying the command/remote. Currently, I don't have Legacy but I wanted to future proof myself should I get it one day. You can save some money going remote only but my fear was the cost of wanting to replace them all one day with command ready ones. Currently, I just use the remotes that come with the command/remote.
But I think a lot depends on your preference and plans.
Raptor Rails: Thank you for your kind and informative comments to my post. My layout is small (5X9), so Lionchief and remote/command turnouts seems the best bet especially if one wants to hand down the set to the next generation. My father started me on trains 70 years ago. Hoping to instill the bug in my grandson whose a little too young right now. But, in a few years, after seeing them run at Granddad's house? However, I know it will be tuff given all the distractions offered by the modern era. It's been a year long process for me, but I'm finally ready to roll, thanks in part to your help. Best
