If it has the plate on the bottom of the truck that pulls the linkage in the coupler, then the tab on the plate is exerting too much pressure on the linkage and will open the coupler due to excessive load on the coupler or when going around curves as the angle tends to pull the linkage slightly.  You have to bend the tab on the bottom plate to reduce the pressure on the linkage.  Don't disassemble the truck, because you will never get it back together.  Reach in with a tool to bend the tab.  Not easy; it's a pain.  Did a bunch when at MTH.
