I have an area on the layout that I want to use signal bridges on.  However, I will need to extend the bridges by 2.5 inches.  Any tips or tricks before I start?  I was thinking it would be best to buy a third bridge to cut and splice in to the others.  There is also soldering and connections to consider.

Why three? Either take a 2.5" chunk out of one, split the other, and insert the chunk, (two splices) or cut the second one 2.5 inches from the end, cut off the end of the first one, and make one splice.

Make a drawing first, transfer the drawing to card board, and fiddle around until you have the correct sizes and orientation of parts. Use that as a pattern when you start cutting.  Put the bridges on a photocopy machine, to get a full size "blueprint" which can be cut and pasted until you're satisfied.
