If you are anywhere near Nicholas Smith Trains, they generally carry the full line of Arttista, so you can look at them before buying.  As others have said, they are pricey, but I am OK with pricey for the "stars" of a scene (where the focus of the scene is supposed to be on the figures).  Megasteam was selling Arttista figures at York, and it seemed they sold well, so they might be carrying them as well in the future.

You can also contact Arttista and buy from them directly. Dennis, the owner, is a great guy. You can also find a current list of all of the figures they offer on their website. I know they have winter figures such as skiers and people on sleds, etc., but I'm not sure about mountain climbers. They definitely have all of the wild animals you asked about, and others as well, such as foxes and wolves.

Other than Woodland Scenics and Bachmann, does anybody know where I can buy O scale mountain climbers, bears, deer and mountain lions?

Have you considered Preiser? I couldn't locate a current source, but they *do* have a mountain climber set in HO, and I suspect there may be an O scale version as well, either current or surplus stock. There may be a few too many liederhosen depicted for a non-European scene, but y'know, beggers, choosers, etc.

Here's a pic:
