What would happen if I wanted to use a diff tender than the one it came with?
An example would be the BlueComet using a k4s tender. Both engines are PS2

All tenders are not created equal, it depends on the specific wiring of the two products. There is also the consideration of the type of PS/2 boards in each, are they both 5V or both 3V boards?
I'd be real careful plugging dissimilar units together.
This is more of a I'm not doing it but want to talk about mixing.

I suspect there's a high likelihood, but I don't know for sure. If they're both RailKing or Premier, I suppose it would be more likely. Even then, I don't really know... Sounds like a question for folks like GGG who takes a lot of different models apart. 
There used to be a warning in some of the engine manuals about swapping tenders. If the tender had the same color sticker on the bottom it was probably OK.With 2 identical engines I 'd probably do it but.... Some engines have the circuit board in the engine, others in the tender, some have MUX boards other do not,,,,Why risk it ??, there's a chance you could end up with 2 dead engines instead of 1.
Listen to John. It is OK to mix and match Lionel tenders with wireless draw bar. This is a great troubleshooting aid. Do not do with MTH. If you have two identical locomotives, you might be OK. Rule of thumb, do not do it. It might cost you a lot of money.
Some PS2 steamers have the board in the loco rather than the tender.
I think this falls into the category "If you have to ask, you probably shouldn't do it".
The smart man (or woman) seeks as much info as possible before undertaking a new task. Learn from others' errors.
