Dave: The actual length of the track you use is more affected by how strong and clean the actual joints and pins are.... If the connections are electrically "good" (tight and clean), then you could use any transformer to actually power your layout, especially with multiple track feeds spaced around the layout.
The determining factor in transformer power is how many watts of power you're consuming with powered engines and passenger cars. (Also track-powered turnouts and operating accessories drawing power).
As many as you want. You just have to run additional power wires to prevent the voltage drop from too many track joints. You will be limited to how many motors and light bulbs you can power at one time.
