Have any of the O manufacturers made any high extension ore cars?
Here is a link to an MTH HO 70 ton, for reference...

Not that I recall. I googled high extension ore car (I think you left off the image, as I don't even get the square with the X or ? on it) and the MTH HO car looks pretty easy to make out of a regular ore car. Especially for someone that can make a Polar Express observation deck
As an aside, one of the local steel mills has coke shipped into their plant. CSX has numerous hopper cars that they appeared to have extended the walls on to carry the less dense material.

Thank you J. I may just go about adding the extended areas to a few of my ore cars.
I couldn't the the image of the car to stay so I added a link instead.

I've added the link instead. It may be because I'm on an iPad, the image wouldn't stay in my post.
The extensions were added to carry taconite , not ore , the other modification is removing the "porch" above the couplers on the o gauge models available. .
The truck extends slightly out from under the ca if you look at prototype pictures.

How common where these? They would not be hard to bash normal cars into, but I don't recall ever seeing any.
Here an image of a 2014 MTH HO version. I don't think there's an O version.

Thanks for putting up the image.

Thank you for the info. I did notice that the trucks would need to be repositioned, but overlooked the porch.
Here is the photo of a DM&IR with extension...
This is one of my MTH ore cars...
Try Weaver, They call theirs a wood chip car but it looks identical to your photo.
