Would like to see a UP Challenger,

UP Challengers have been WAY overproduced! MTH has issued their models over, and over, and OVER, and Lionel has done the same. Sunset/3rd Rail also issued a model of the early UP Challenger, which show up occasionally on eBay.

UP F9's

Could be a possibility for future production.

and SD70ACe's.

I think you will find that Sunset/3rd Rail tends to NOT produce "modern" diesel units, which both MTH and Lionel offer.

Understand most are likely sick of seeing the Challenger. To me MTH's proportion of loco over drive wheels are off. I do have a pair of the Lionels varients. GGD are just top notch in every way!  The F9's would be great to see. I will say as well I doubt they will ever make an ACE, but another favorite of mine.

what is happening to their NYC H10 offering?

Not enough reservations yet. Need about 15 or so additional reservations to begin production.

I've said before, if you want a particular model that doesn't command the loyalty of many folk (not every model need be PRR), you have to work at it. I view my lovely B&O steamers, including the magnificent Cincinnatian, and reflect on how earnestly and devotedly we asked,  and promised reservations for, them.

Having Mr. Heil on our side did help, of course.

I'm curious what in the roads I model they have done long in the past I may have missed.

What railroads do you model ?

B&O, PRR, Western Maryland, Erie, and the little branch lines in Maryland and southern Pennsylvania.

I've only been involved in model railroading since 2015, and the scale side for about a year, maybe two.

I've got a T3, hoping to get an L1s, but wonder what I've missed and which I need to be looking out for.

Sunset / 3rd Rail has done the following:

S2

Keep in mind the PRR S2 was a Williams' product that never shipped before they went bankrupt.  Sunset bought the engines and sold them as their first 3rd Rail product.  These engines are not the same high quality as the 3rd Rail stuff since then.

The PRR N2 was not produced by 3rd Rail.  They also sold the I1 with short and long tenders.  Not sure they did both the M1a and M1b; I'll have to research that.

Another engine they are not going to produce is their current in production FA-1 in Pennsy colors.  Rats.

They definitely did both the M1a and M1b.  I recall at the time they were released, both MTH and Lionel had also released models (MTH M1b and Lionel M1a).  The MTH, Lionel and 3rd Rail were all within $50 of each other.  Talk about a 3rd Rail bargain!

It should also be noted that the Q1 and S1 were both done "as built" with full streamlining and as they appeared later in service with some streamlining removed.  They also did 3 versions of the T1: the original two with long taper on the nose (this version also done by MTH), the version with shorter nose taper and 3 portholes on the sides of the pilot (brass models of this version also done by Williams and Weaver) and the later version with dual headlights and no portholes (this version also done by Lionel).  When 3rd Rail does a locomotive, they do it right.

A scale EMC Doodlebug would be a nice addition to less modeled trains.  3rd Rail did do a brass Brill 660 Gas Electric (or diesel electric after 1940 or so).  They show up for sale now and then.  Here are some photos of mine.

The sound card in the model, which has TMCC, sounds like a diesel so this is a post 1940 version of the Brill 660.
